- 2 cups sushi rice, cooked
- 1 lb fresh salmon, cubed
- 1 tbsp sesame oil
- ½ cup mayonnaise
- 1 tbsp sriracha sauce (adjust to taste)
- 1 tbsp soy sauce
- 1 tbsp rice vinega
- 2 tbsp furikake seasonin
- 1 sheet nori, shredded
- 1 avocado, sliced
- 1 tbsp sesame seeds, for garnish
- Pickled ginger (optional, for serving)
Preheat your oven to 375°F (190°C).
In a bowl, combine the cooked sushi rice with rice vinegar. Mix well and spread evenly in the bottom of a greased baking dish.
In a separate bowl, toss the cubed salmon with sesame oil and soy sauce. Spread it over the rice layer.
In a small bowl, combine the mayonnaise and sriracha sauce. Spread this mixture evenly over the salmon.
Sprinkle the furikake seasoning over the top of the mayo mixture.
Bake for 20-25 minutes, or until the salmon is cooked through and the top is lightly golden.
Remove from the oven and garnish with shredded nori, sesame seeds, and avocado slices.
Serve hot with pickled ginger on the side, if desired.
