In a bowl, mix ground beef with salt, pepper, garlic powder, onion powder, and smoked paprika.
Divide the beef into 8 small portions, roughly the size of a meatball.
Heat a cast-iron skillet or griddle over medium-high heat and lightly grease with vegetable oil.
Place a tortilla on a flat surface and add a portion of ground beef on top.
Press the beef flat using a spatula to spread it evenly over the tortilla.
Place the taco meat-side down onto the hot skillet and press it down firmly for about 2 minutes.
Flip the taco and cook for another 2 minutes, until the tortilla is golden brown and crispy.
Sprinkle shredded cheese on top and let it melt slightly.
Remove from heat and top with diced onions, chopped cilantro, and jalapeño slices.
Drizzle with sour cream and salsa or hot sauce.
Serve hot with lime wedges on the side for extra flavor.
