Ingredients
  

  • 1 b ground beef (80/20 blend)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • 8 small corn or flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup diced onions
  • ½ cup chopped cilantro
  • 1 jalapeño, sliced (optional)
  • ½ cup sour cream
  • ½ cup salsa or hot sauce
  • 1 tbsp vegetable oil

Instructions
 

  • In a bowl, mix ground beef with salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Divide the beef into 8 small portions, roughly the size of a meatball.
  • Heat a cast-iron skillet or griddle over medium-high heat and lightly grease with vegetable oil.
  • Place a tortilla on a flat surface and add a portion of ground beef on top.
  • Press the beef flat using a spatula to spread it evenly over the tortilla.
  • Place the taco meat-side down onto the hot skillet and press it down firmly for about 2 minutes.
  • Flip the taco and cook for another 2 minutes, until the tortilla is golden brown and crispy.
  • Sprinkle shredded cheese on top and let it melt slightly.
  • Remove from heat and top with diced onions, chopped cilantro, and jalapeño slices.
  • Drizzle with sour cream and salsa or hot sauce.
  • Serve hot with lime wedges on the side for extra flavor.
