Ingredients

  • 1 sheet of puff pastry (store-bought or homemade)
  • ½ cup ricotta cheese
  • ¼ cup powdered sugar (adjust based on sweetness preference)
  • ½ teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

Preheat the Oven

  • Start by preheating your oven to 400°F (200°C). This ensures your puff pastry gets nice and crispy.

Prepare the Puff Pastry

  • Unfold your sheet of puff pastry on a lightly floured surface. Cut it into squares or rectangles, depending on the size of pastries you want to make. You can even make mini pastry pockets for bite-sized treats.

Prepare the Ricotta Filling

  • In a small mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Stir until smooth and well combined. Adjust the sweetness to your liking.

Fill the Pastry

  • Place a generous spoonful of the ricotta mixture in the center of each puff pastry square. Be careful not to overfill, as the filling may spill out while baking.

Fold and Seal

  • Fold the puff pastry over the filling to create a pocket or a triangle. Press the edges together with a fork to seal the pastries and prevent the filling from leaking out.

Apply Egg Wash

  • Beat the egg and lightly brush it over the top of each pastry. This will give the pastry a golden, shiny finish once baked.

Bake

  • Place the filled pastries on a baking sheet lined with parchment paper and bake for 12-15 minutes or until they’re golden brown and puffed up.

Serve and Enjoy

  • Once baked, let the pastries cool for a few minutes before dusting them with powdered sugar. Serve them warm for the best experience!
