- 2 cups egg whites (about 10 large egg whites)
- ½ cup cottage cheese
- ¼ cup shredded cheddar cheese (or preferred cheese)
- ½ cup diced bell peppers
- ¼ cup diced onions
- ¼ cup chopped spinach
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- Cooking spray or oil for greasing
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
Blend Ingredients: In a blender, combine egg whites, cottage cheese, salt, pepper, garlic powder, and paprika. Blend until smooth.
Prepare Veggies: Dice bell peppers, onions, and spinach.
Fill Muffin Tin: Evenly distribute the chopped veggies into each muffin cup. Pour the blended egg white mixture over the veggies, filling each cup about ¾ full.
Add Cheese: Sprinkle shredded cheese on top of each egg bite.
Bake: Place in the oven and bake for 18-20 minutes or until the egg whites are set.
Cool & Serve: Let them cool for a few minutes before removing them from the muffin tin. Serve warm or store for later.
