- 1 lb ground chicken
- 1 cup grated Parmesan cheese
- ½ cup breadcrumbs
- 1 egg
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme
- ¼ cup chopped parsley
- Olive oil spray for baking
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic powder, onion powder, black pepper, thyme, and parsley. Mix until fully incorporated.
Scoop tablespoon-sized portions and roll into balls, then flatten into small disks resembling crackers.
Place the crackers on the prepared baking sheet and lightly spray with olive oil.
Bake for 15-20 minutes or until golden brown and crispy.
