- 4 boneless skinless chicken breasts (or rotisserie chicken for ease)
- 1 can of cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen peas (optional)
- 1 sleeve Ritz crackers (crushed)
- ¼ cup melted butter
- Salt and pepper to taste
Preheat oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
In a bowl, mix the cream of chicken soup, sour cream, and shredded cheddar cheese. Season with salt and pepper to taste.
Layer the cooked chicken (shredded or cubed) in the bottom of the casserole dish. If using peas, scatter them on top of the chicken.
Pour the soup and cheese mixture over the chicken (and peas, if using) and spread it evenly.
In a separate bowl, crush the Ritz crackers. Mix the crushed crackers with melted butter until well coated.
Sprinkle the buttery cracker mixture evenly over the casserole.
Bake for 30-35 minutes, or until the casserole is bubbly and the cracker topping is golden brown.
Remove from the oven and let it rest for 5 minutes before serving.
