Ingredients
  

  • 6-8 eggs (scrambled or fried)
  • 4-6 slices of bacon (or turkey bacon)
  • 2 cups of hashbrowns (fresh or frozen)
  • 1-2 bell peppers (chopped, optional)
  • 1 cup shredded cheese (cheddar or preferred variety, optional)
  • 1 tbsp butter or oil (for greasing the griddle)
  • Salt & pepper (to taste)

Instructions
 

  • Set the griddle to medium-high heat and allow it to warm up for about 5 minutes.
  • Place bacon slices on the griddle and cook for 5-7 minutes, flipping occasionally until crispy.
  • Remove and place on a plate lined with paper towels.
  • Add butter or oil to the griddle, then spread the hashbrowns in a thin layer.
  • Press them down slightly and cook for 5-7 minutes, flipping once until golden and crispy.
  • Crack the eggs into a bowl, season with salt and pepper, and whisk.
  • Pour onto the griddle and cook, stirring occasionally, for 2-3 minutes until fully set.
  • Arrange eggs, bacon, and hashbrowns on plates.
  • Sprinkle cheese on top of the eggs while still hot (optional).1-2 bell peppers
